Since 2003, Mars, Inc. has funded research into the history of chocolate by the Colonial Chocolate Society, whose members are scientists and historians. The company funded the development of American Heritage Chocolate based on the recipe created by Eric Whitacre. It is sold in blocks, sticks, and as cocoa mix at partner historic sites that offer demonstrations of period chocolate making.
